Pasar Malam Deep Fried Chicken Wings (夜市炸鸡翅)


I guess it is fine to have some sinful dish once a while right... :p My boys love fried chicken, be it fried chicken drum or parts or wings. My Shawn would drool if he sees those pasar malam (night market) hawker selling fired chicken while going night market shopping in the weekends. If he ask for it, this conversation this will start :p
Shawn: 'Mum, can i have one?'
i will reply him ' Wait ah! mummy will fried some for you this weekend' 
Shawn: 'Why not just buy some? Easier, faster and you wouldn't need to clean your kitchen.
me:  LOL
i will reply again: 'Wait dear! We didn't know how many times they have used the oil for frying!!!

 久久吃一次炸鸡翅因该是没问题吧!!我家的宝贝们很爱吃炸的食物。香炸鸡翅,炸薯条, 炸鸡块等等。 我想小孩都爱吧! 香香,脆脆 很好吃但是我怕怕。不敢常常让他们吃!
每回如果到夜市走走,只要看到小贩卖炸鸡翅。。。。。
Shawn 就会看着我问。。咪,我要买?
咪: 等,咪炸给你吃!
Shawn: 为什么呢? 买不是更方便多吗?你也不用抹厨房呢!
咪: 等等吧宝贝!我们不知道外边的油炸了多少次嘛!
对吧!很多时候我们想在外边买炸的食物可是又怕那油不新鲜。还有,还有一些无良小贩还加了吸水草在热油里让炸出来的成品更脆口更脆度耐久。 你有听说吗?

 It is true right, if will eat deep fried food outside we never know how many times they have repeated to use the oil for deep frying. Further more i heard some people add drinking straw into the deep frying oil to produce a more crispy crust for the deep fried food. Have you heard of that?
上个星期六跟大宝贝Shawn做了个小型的生日会。 叫来了几个好友和表哥表弟。原本他的生日是在星期一不过星期一是读书天就改去星期六咯!周末他们可以玩迟一些些!就在这天我准备了他爱的夜市炸鸡翅和其他的食物。还烤了巧克力北海道杯子蛋糕给他庆生。想杯子蛋糕容易吃一人一杯就搞定了。。哈哈 (懒咪咪!!)
Last Saturday we had a early celebration for Shawn's birthday. The actual date is on Monday but we make it on a weekend so everyone can enjoy and have fun till a bit late. We had a small birthday party for him. We invited some close friends and his cousins. I prepared some deep fried chicken wings, some other food and bake him some Chocolate Hokkaido cupcakes for his birthday cake.This HCC is easier to serve since it is in individual paper cups :D

Everyone in the party love these little birthday cupcakes. It is chocolaty, moist, fluffy and the whipping cream goes really well with it.
Crispy outer skin and inside is tender and juicy! (外皮香脆,内湿嫩还吃!)
About this pasar malam deep fried chicken wings, you might ask what is so special about it? These chicken wings are marinade with just salt and a little bit of aji-no-moto. Then it is coated with a layer of batter and in it goes into the hot oil and deep fried until it is browned and cook. The batter is simple, there is plain flour,  salt,  pepper, turmeric powder and water. I learned this from a friend who runs a school canteen for 10 over years. Her deep fried chicken wings sell like hot cakes in the canteen. She share with me how she marinate the wings and what she added into the batter but there is no specific measurement. Here i try to replicate from what she share to me. 
是不是觉得这夜市炸鸡翅有什么特别? 其实也没什么的,只是这炸鸡翅炸出来外脆内嫩,凉了还是外脆的。食谱和做法是位安迪简单跟我分享的。她本身是在学校贩卖部的老板娘。她的炸鸡翅是学校最消的货之一噢。她跟我分享时没指定材料的分量,我只好自己调配咯!


Crispy crust that stay crispy till it is cold. (香脆的外皮还是脆脆的虽然鸡翅放凉了)
This is the batter that coat the chicken wings before deep frying. It is runny and light yellowish. The yellowish color is from the turmeric powder.
Pasar Malam Deep Fried Chicken Wings (夜市炸鸡翅)
Recipe source:  my little favourite DIY
Batter is enough for 5 whole chicken wings or 10 wing middle part or drumlets

Ingredients:
5 whole chicken wings or 10 wings middle or drumlet part
1/2 tsp salt
1/4 tsp Ajinomoto

Batter for coating the wings:
5 Tbsp flour
2 Tbsp rice flour
75ml water
1/8 tsp turmeric powder
pinch of salt
pepper 

To Do:
1. Wash and pat dry the chicken wings. Marinated the wings with salt and Ajinomoto. Covered and refrigerate for 30 minutes to 1 hour.

2. In a large mixing bowl combine flour, rice flour, turmeric powder, salt and pepper. Gradually pour in water and mix into a runny batter. Set a rack on a rimmed baking sheet.

3. Heat 1 inch of vegetable oil in a large deep skillet or chicken fryer pan or wok over moderate high heat. Dip a pair of bamboo chopstick into the hot oil, if bubbles appear around the chopstick mean the oil is hot and it is ready to fry.  

4. Discard any liquid from the marinated wings if there is any. Dip wings into the batter to coat evenly, tap lightly at the side of the bowl to let the excess batter drip off. Fry the wings in batches, turning as needed until cooked through and deep golden brown about 10-12 minutes. (Heat up the oil between batches ) Remove with tongs and transfer to rack to drain. 
I cook Nasi Kunyit to go with it. 也煮了黄姜饭配炸鸡翅 :D

I have 2 batches of chicken wings, this is the second batch. 这是第二批炸的鸡翅。
This is the first batch chicken wings. 这是第一批炸的。

  2. 赞同 mui mui 说的外卖的油不晓得炸了几回。那都是回锅油。吃了都对身体不好。
    我当义工会去做资源回收。我常看到小贩倒出来的油其实都比我们车的黑油还要黑。看了好恐怖、好恶心。

    可是现在有好好妈咪在家准备料理给小孩。这是幸福的事了。嘻嘻嘻 。。。。 好开心地。加油。。

    Yes... I have heard about the myth about people adds drinking straw into the deep frying oil to create an extra "taste" I wonder how true is this... Thank God that we are cooking a lot more at home. Nice chicken wings... even better than the pasar malam ones!!!

    yes, even now a day we cut down the visit to KFC too, not sure how many times they reuse the oil

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Get ready the filling and the wanton wrappers. This is the parade of my Shark's Fin dumpling ... lol Homemade parchment paper liner. Arrange them neatly into the bamboo steamer. HOT! HOT! Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
