Old-Fashion Banana Cake (老式香蕉蛋糕)

It's another exciting month for Little Thumbs Up. We have a special host this month she is  from BitterSweetSpicy. She is the one and only FAEEZ. Why is she so special, simply because she is from a different culture. Isn't it wonderful to be living in Malaysia and Singapore, we are the country with multi-races and multi-culture. Last night my hubby ask me: What is your LTU theme this month?
Me : Banana ... O my O my!! I forgot to buy banana today!!!! 
Hub: No worries! We just drive down to the nearest 'Tamu Muhibah' (tamu in malay means open market) to hunt for some banana.
Me: It's already 9pm now... we better hurry up!
I am lucky i found some bananas in the other tamu and not the Tamu Muhibah that my hub mention. Let me bring you to the small tamu that i bought banana from.


This is the other tamu that we went. We managed to buy some bananas here. I also bought one big pisang tanduk here.  

Saw some local produce fruits. Do you feel that this fruit looks like a lemon gone wlid, the Buddha's hand Citron is actually a distinct fruit in the citron family.

These are the banana that we bought. The big one is pisang tanduk. Tanduk mean horn; as the banana shape like a horn.

This banana cake is moist and nice. I like the added walnut as it give it a extra texture and nutty flavor. Please do add in the walnuts though in the recipe it is list as optional! Baking this cake is easy peasy; just mix, mix, mix; stir and stir (do not overmix) , pour into the cake tin and baked.

Old-Fashion Banana Cake (老式香蕉蛋糕)
Recipe adapted from Ina Graten here
make 1 8 by 8 inches square cake

Ingredients:
3 very ripe banana, mashed (i use 4, cause mine are quite small)
3/4 cup granulated sugar (i used 2/3 cup)
1/2 cup light brown sugar, lightly packed (i used 1/4 cup)
1/2 cup vegetable oil
2 extra large eggs, at room temperature
1/2 cup sour cream (i used plain yogurt)
1 teaspoon vanilla extract 
Grated zest of 1 orange (i omit)
2 cups of all-purpose flour
1 teaspoon baking soda (i used 1/2 teaspoon baking soda and 1/2 teaspoon baking powder)
1/2 teaspoon kosher salt
1/2 cup coarsely chopped walnuts (optional)

Cream Cheese Frosting (i did not use this, if you are interested to add frosting please refer to the original recipe from the link above)
Walnut halves, for decorating (oprional) (i use banana slices for decorating)

To Do:
Preheat the oven at 180C/350F. Grease and flour a 9 by 2 inches round cake pan. (i use a 8 by 8 inches square cake pan, greased and lined with parchment paper)

In a mixing bowl mix mashed banana, granulated sugar and brown sugar with a hand whisk or hand mixer till combine and smooth. Add in oil, eggs, yogurt and vanilla. Mix till it is smooth.

In a separate bowl, sift together the flour, baking soda, baking powder(if using) and salt. Whisk in dry ingredients and mix just to combined. Stir in the chopped walnuts (if using) Pour the batter into the prepared pan and bake for 45 to 50 minutes. (i bake mine for 52 minutes) until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes, turn out onto a cooling rack, and cool completely.

    I reckon the banana from different part of the world is different :p I really think the tropical banana are sweeter than those commercial De Monte ones. The Aussie ones are ok but I reckon the Asian kinds are the best!

    With the best kind of banana, I think your banana cake must be very yummy!

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Get ready the filling and the wanton wrappers. This is the parade of my Shark's Fin dumpling ... lol Homemade parchment paper liner. Arrange them neatly into the bamboo steamer. HOT! HOT! Marble Butter Cake .. 云石奶油蛋糕 - Bake Along #59
