Sacher Torte always gives me a very authentic and classy feel kind of cake. Originated from Austria, Vienna, Sachertorte is a specific type of chocolate cake or torte invented by Austrian Franz Sacher in 1832 for a Prince..more details  I have never tasted a authentic Sachertorte  before. I wish, one day i will have a chance to taste it.  

According to this book (美味蛋糕新主张-Chinese bakery cookbook)., this is a modify version of Sacher Torte instead of the authentic. This is a moist, soft and chocolaty cake. I only have milk chocolate on hand so i use it to substitute the bitter sweet chocolate. Blame me!! this cake have re-modify again. It is a little overly sweet to my liking due to the milk chocolate so i decide not to add the ganache to the cake. I just sift some icing sugar on and serve. It  is so good despite it is a little bit too sweet :p It is soft, moist, chocolaty  and its texture is awesome. The texture is between a chiffon and a sponge cake . If you love chocolate this is definitely your piece of cake. I was thinking, maybe i can bake this cake to serve my friends and sibling when they come visiting in this CNY but this time i will definitely bake this with bittersweet chocolate, spread it with apricot jam and pour the ganache on. Yeah!! ^_^

but i can tell you it is so so so good!!!

Sacher Torte (modify version) : 巧克力秒杀蛋糕 (改良版)
makes 2, 6 inches round cake
recipe adapted from 美味蛋糕新主张-Chinese bakery cookbook.

Ingredients for chocolate cake:
50g vegetable oil (i use canola oil)
80g milk
15g unsweetened cocoa powder
100g bitter sweet cooking chocolate (i use milk chocolate)
80g egg yolk (i use grade A eggs - about 4 eggs

180g egg white (i used grade A eggs - about 4 eggs minus 1 Tbsp)
120g castor sugar (i reduce to 100g as milk chocolate is sweeter compare to bitter sweet chocolate)
75g low protein flour (i used cake flour)

To Do:


  1. Perheat oven at 170C. Prepare 2, 6 inches round baking tray. Do not grease the side, i just lined the bottom of baking tray. (i use a spring form baking tray)
  2. Pour canola oil and milk into a sauce pan. Heat it up until it is almost to the boiling point. You can see little little bubble starting to appear around the side of the pan. Leave pan from the stove. (i pour oil and milk into a mircowave proof bowl and zap in the mircowave for 30 seconds (high) twice) Add in cocoa powder, mixed well. Add in bitter sweet chocolate, (chocolate will start to melt slowly) mixed well.
  3. Stir in egg yolks to combine, into a smooth chocolate yolk batter. Set aside.
  4. In a clean mixing bowl add egg whites. Beat egg whites till foamy. gradually add in sugar in batches and continue beat until soft peak formed ( it will takes about 4 to 5 minutes using speed 3 at a hand mixer)
  5. Take 1/3 of meringue, with hand whisk to mix well. This will lighten the chocolate yolk batter.
  6. From a hand whisk change to a spatula,  fold in alternately between the balance of the meringue and flour gently fold into chocolate yolk batter till well combined. (do not over mix)
  7. Pour into 2, 6 inches round baking tray. Bake in a preheated oven at top 170C and bottom 150C bake for 25 to 30 minutes. (i bake mine at 170C  on middle rack with a baking tray at lower rack-to reduce the heat. I baked mine for 26 minutes. Please adjust your oven accordingly as oven temperature varies)
  8. Once baked, turn your cake tin upside down facing onto a wire rack and cool completely before remove from the tin.
  9. Cake is ready to unmould when it cool. Use a thin plastic spatula to run along the side of the baking tray and bottom of the baking tray. Place on a cake board or serve plate. Sprinkle with some icing sugar and serve.    (my version without the chocolate ganache :p)
It is simply a fabulous cake..it is a keeper!!

    Glad that I didn't have to fly to Austria to enjoy this lovely cake... but I have to fly to your home to enjoy your moist and chocolaty sacher torte!!! At least, your place is nearer than Austria!!! :p

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
