Chopped apple salad with Toasted Walnuts, Blue Cheese and Pomegranate vinaigrette (苹果核桃沙拉配石榴油醋)

Christmas is on the way!! Have you start baking for Christmas??
This is the most excited month of the year... Christmas is here...
My kids are busy in Sunday school. They are preparing some performance in the coming Christmas celebration in our church. Shawn is going to perform a song and a dance together with his Sunday school friends.

Today i am going to share a simple and light salad. This is another Bobby Flay's recipe. This is a good starter for a Christmas dinner. There is chopped apple, toasted walnut, some greens, with a light and sweet pomegranate vinaigrette.  Some crumble blue cheese is added too.  

"If you aren't a fan of blue cheese," Flay says, "try substituting feta or goat cheese in the salad. Both pair really well with apples and pomegranates."

Recipe call for baby spinach and endive which i don't have, i used romaine lettuce instead. I also used pomegranate juice instead of molasses. We hardly sees this type of special ingredients in our leading supermarket.

Pour in Pomegranate Vinaigrette, toss toss toss everything in there and enjoy!!!

Chopped Apple Salad with Pomegranate Vinaigrette
Recipe adapted from foodnetwork.com
serve 2-3  
prep time: 20 minutes

Ingredients:
Pomegranate vinaigrette
3 Tbsp pomegranate juice 
2 Tbsp fruit vinegar (instead of red wine vinegar)
1 Tbsp Dijon mustard 
1 Tbsp plus 1 tsp honey 
freshly ground black pepper
salt
1/4 cup olive oil

Salad
2 apples (gala, fuji or honeycrisp) cored and cut into 1/2 inches size
1 head romaine lettuce instead of baby spinach and endives (roughly tear)
1/4 cup toasted walnuts
1/4 cup goat cheese instead of blue cheese
1/4 cup pomegranate vinaigrette (as prepared in the recipe)
freshly ground black pepper 
salt

To Do:
For the vinaigrette:
Whisk together pomegranate juice, vinegar, honey in a bowl. Season with salt and pepper. Slowly whisk in olive oil until emulsified.

For salad:
Combine apple, romaine lettuce, walnuts and goat cheese in a large bowl. Add vinaigrette and toss to coat. Season with salt and pepper to taste.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
