This is the simple pumpkin noddles that i usually cook on a free and easy Saturday. On Saturday my kids would wake up quite late. Not like school days they would have to wake up at 5.30am as school start at 6.50am. So on Saturday i would let them lay in bed for a little be longer ..

Crispy ikan bilis cook from mircowave oven.
Pumpkin Noodles (南瓜手工面条)

Serve 5
400g plain flour
½ tsp salt
1 egg
1 tsp corn oil
Tapioca flour for dusting
Sift flour into a large mixing bowl and add salt. Add egg, pumpkin paste and oil. Blend well and knead into a stiff dough. Cover dough with a tea towel and leave aside for 1½-2 hours.
Dust table top with tapioca flour and flatten the dough into a thin flat rectangle. Lightly sprinkle or dust with tapioca flour and cut into four rectangular pieces. Lightly dust the pieces with tapioca flour to prevent sticking.
Adjust the knob of a noodle machine to the widest setting. Turn the rollers slowly. Insert a piece of dough and keep passing the dough through the machine. Decrease the roller spacing each time until you get the thickness that you want.
For the final stage, pass the sheet of
dough through the cutting machine to make the noodle strands. Repeat the
procedure with the remaining pieces of dough. Dust the noodles lightly
with tapioca flour and store them in airtight container in the
refrigerator.
Toppings:
Mince pork
280g mince pork
3 pcs chinese mushroom (clean, soak and diced, keep the soak water)
some black chinese fungus (clean, soak and shredded)
2 cloves garlic- chopped
1/4 tsp sugar
1 tsp salt
2 tsp light soy sauce
a generous dash of pepper
To Do:
Add some oil in a wok, saute till it is fragrance. Add in mince pork stir-fry over medium heat until it is cook. Add in diced mushroom and black fungus, stir-fry for another minute or two. Add in seasoning, taste. (the taste of the topping is up to individual liking. You may adjust to your own liking) Dish up and side aside.
Fried crispy garlic and shallots
2 cloves garlic
3 shallots
Peel both garlic and shallot. Chopped the garlic and slice the shallot. Put both into a mircowave oven proof bowl. Add some oil (just enough to cover the garlic and shallot). Zap in the mircowave oven for 3-4 minutes to make crispy garlic and shallots.

There is 2 parts to prepare !) make the noddles 2) cook the toppings. You can prepare both a day ahead. The next day just cook and serve.
Crispy ikan bilis cook from mircowave oven.
It is easy to have nice and crispy ikan bilis (dried anchovies) in minutes Just clean and split
the ikan bilis. Rinse and shake off excess water. Arrange on a flat plate, single layer. Put into the mircowave and mircowave high power level for 3 to 4 minutes. Take out from the mircowave and let it cool. Crispy ikan bilis is done when it is cool. Store in the air tight container.

160g pumpkin400g plain flour

the pumpkin until soft. Mash through a fine wire sieve into a paste. (I remove the seeds and clean the pumpkin with skin on. Cook the noodles
- Boiled a pot of water. While waiting the water to boil, divide the noodles into portions. Normally 1 make 1 serving per portion.
- Prepare a plate add in 1 tbsp of garlic and shallot oil (the oil that use to fried crispy garlic and shallot) 1 tbsp light soy sauce.
- Once the water boil, throw in the noodles. You can loosen the noodles with a pair of long chopstick. When the noodles float up mean it is cook or you can pick a piece of noodle out to taste its doneness.
- Put the cooked noodles into the prepared plate, mix it thoroughly with the garlic oil an light soy sauce.
- Add the mince pork topping, crispy fried garlic and shallots. Top along the side with the blanch sayur cangkuk and top with crispy ikan bilis (crispy anchovies).
- Serve immediately with dried sambal chilli.
