Seafood Tofu (海鲜豆腐) LTU October - Soy Bean #1

Last week when I was  preparing this delicious tofu dish for dinner, my second (Sam) comes along ......
Sam goes:  'Mum, this smell so good! Another dish for LTU? Who is the special host for this month?'
I was not surprise he said it is for LTU but I was surprise he is asking who is the host because he never ask about the host. 
Mum : Auntie Mich from Singapore is hosting for LTU this October.'
Sam: Auntie Mich is so brilliant. She chose 'soy bean'  and Soy Bean can make my favourite food 'TOFU' 
Mum: ...LOLs

Sam loves tofu, he would eat tofu no matter how it is prepared :D To be actual all my kids enjoy eating tofu. My fil and mil is runing a home base tofu business for 30 over years. They make soft pressed tofu, fresh block pressed tofu, yellow bean curd and tofu puff (deep fried tofu -aged). They sell their tofu in the Miri open air wet market. If you happen to come to my town Miri, you must try their tofu. Their tofu  sell of very early every morning. If you come at 7am to buy, they will ask to come back earlier tomorrow morning. (I will have another post talking about why you must try their tofu :D)

What i am sharing today is a special home made tofu called Seafood Tofu. I ate this in a restaurant here and we all love it. Saw this recipe in a food magazine so just give it a go. It taste just like the one we had in the restaurant, only that home made is less oily and it is really YUM!!

我家宝贝很喜欢, 他们都爱吃豆腐做的菜肴. 爱吃豆腐可能是他们的公公婆婆是做豆腐生意的吧..呵呵!! 我家公公和婆婆是做家庭式豆腐生意的.已经做了将近30多年了. 每天的豆腐是拿到巴刹的菜市里卖. 很早就卖完的, 大概7点早上就断货了. 有卖水豆腐,白和黄豆干和豆腐pok. 如果您来Miri一定要裳裳我公公,婆婆的豆腐呢^_^

Pan fry this seafood tofu is not so oily compare to deep fry.

Homemade soft pressed beancurd (tofu) here

1) Mashed tofu with a fork.
2) Prepare some fish paste. ( i use homemade fish paste - my mum made them for me :p)
3) Add the mashed tofu, fish paste and all the seasoning in a big mixing bowl and give them a good mixed.
4) Fill the tofu mixture into a non stick loaf baking pan (i greased the pan with some cooking oil) Steam for 20 minutes. 
5) Unmould the steamed tofu mixture, now this processed tofu it is like a piece of tofu cake. Cut processed tofu into rectangle shape once cool down.
6) Coated the processed tofu with some corn flour, shallow fry in hot oil until golden brown, dish out and drain. Serve with chilli sauce or mayonnaise. (i made my own mayonnaise with Delia's recipe here)

Seafood Tofu (Home made special tofu)

Ingredients:
3 blocks soft tofu ( i  use 5 pieces  soft pressed homemade tofu)
180 g prawn paste (i use fish paste)
3 pcs mushroom, soaked and chopped ( i omit this)
5 pcs water chestnut, chopped (i omit this)
3 eggs,
2 tbsp chopped coriander
1 tbsp corn flour

Seasoning:
1 tsp salt
1/2 tsp pepper
1/2 tsp chicken stock granule

Batter:
200 g pre-mixed deep frying flour 
3 tbsp cooking oil
some water 
** I did not add this batter i just coated mine with corn flour and shallow fry.

To do:
1) Mashed tofu with a fork.  (refer pic-a 1)
2)Mix in all the ingredients and seasoning. (refer pic-a 2)
3)Fill tofu mixture into a greased square container, steam for 20 minutes. (i use a loaf baking pan) Cut processed tofu into rectangular shape once it is cool.
4) Dip processed tofu into batter, deep fry in hot oil till golden brown, dish out and serve with chilli sauce. (i coated mine in corn flour, shallow fry till golden and serve with home-made mayonnaise)

  6. Doreen , I made something like this last time but it didn't turn out as wonderful as yours ! I got the recipe from the book that I've borrowed from the library ( as usual ! ) :P I guess the secret is to steam it first before frying :D Yeah , coating it cornflour ( I usually use tapioca starch ) is way better than making the batter . Thanks for cooking er sharing the recipe ;D

    I really have to salute to all of you that make your tofu from scratch... I love to do that too but I will be the only one eating my homemade tofu :p

    Sam follows our LTU! He is so cute! Ryan couldn't be bother... All he wants is to bake with me, chocolate and non-meatless food - LOL!

  10. Mui Mui, I like seafood tofu. In a Malaysian restaurant here, they have their own seafood tofu as their signature dish & we had ordered for a few times and they aren't cheap. This must be one of the precious recipes that I have come across with, something not as common as a cake recipe, you know what I mean. Thanks for sharing.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Get ready the filling and the wanton wrappers. This is the parade of my Shark's Fin dumpling ... lol Homemade parchment paper liner. Arrange them neatly into the bamboo steamer. HOT! HOT! Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
