Classic Tomato Pizza...经典番茄批萨

My kids are fans of pizza. They only love tuna and corn pizza and no other. I am going to make a pizza from Donna Hay's book (Modern Classic Bk 1) It is a tomato pizza and you can guess what is the look on my kids face.. ><"
To please them i make a little switch up for the pizza toppings. Not that they don't like tomato but they prefer ketchup more then fresh tomato  *sigh*

在此要谢谢Zoe (Bake for Happy Kids) 在去年的圣诞节送了这本好书给我. 在写部落格认识了好多人像 Jessie (Jessie cooking moment) , Bee Kuan (Everybody eats well in Flander),  Sonia (Nasi lemak lover) 通过共同的兴趣也慢慢的变成朋友, 还认了位干姐姐呢..(^_^*) 可说是收益良多...当然还有很多格友们, 真不好意思没能一一把名字给报上来!! 

Zoe and I know each other via blogging. I remember the first time she visit my blog i am flattered because she is such a wonderful and talented blogger. Then i join her Bake Along event then get to know Lena from Frozen Wings, Joyce from Kitchen Flavours
 (^_^)we becomes friends. They are very nice, one of the great bloggers i can say and they are very encouraging too.

This recipe is fantastic yet is super-easy. I only need to add all my dough ingredients into my bread maker. With the bread maker.... it cut out all the tedious bits of making a enriched dough.
My second  offer to be my sous chef hahaha..
Boy: Mum can i help you to spread the tomato ketchup on the pizza crust?
Mum: Sure.
Boy: Yippee!! Can i pour half of this onto the pizza crust?? (he means 1/2 bottle of my ketchup...fainted (=_=)

 这是个超简单的批萨食谱. 只需把面皮的材料放入面包机就搞定了. 面皮好了就加上馅料就可以送入烤箱了. 
二宝贝走来说:  妈咪, 让我来帮你抹番茄酱.
妈咪 好啊! 你真乖:D
二宝贝:  妈咪茄酱好吃,可以倒多点吗??
妈咪:  可以. 你要倒多少多呢?
二宝贝:  半瓶可以吗?
妈咪:  .....(=-=) 摆眼(晕)

Tuna and corn for kids...they love this :D
The pizza crust is so good that they request they wanted this same crust for the next time.

Two flavour;  my kids tuna and corn; mine tomato and cheese..win win for both..:) :) ;)

I proof mine for 30 minutes.


Why 30 minutes as the recipe call for 20 minutes?? hehehe blame me, after mixing and kneading the pizza dough, i went out to pick the kids from school. i knew it will take me more than 20 minutes so i oiled a piece of ploythene bog cover the dough tightly and put it into the refrigerator. This will let the dough rise slowly in the refrigerator..:p By the time i get home it is just nice to start making my pizza...: )

Classic Tomato Pizza
recipe source: Modern Classic Book 1 of Donna Hay with my modification in purple

Ingredients:

1 quantity basic pizza dough .. here
semolina for dusting (i used plain flour)


topping:
4 vine-ripened tomato, thinly sliced
2 tablespoons oregano leaves (i used dried oregano flakes) 
300g (10 oz) mozzarella, thinly sliced
3/4 cup black olives (i did not add this)
olive oil (i did not add this too :p)
basil leaves (i added this)

To Do:

  • Preheated oven to 220c (i preheated mine to 200c only. Mine is a small oven and it get hot really fast. I guess you have to know your oven well to bake some beautiful bakes. Am i right?? :D)
  • Place flat baking trays in the oven to heat. Divide the dough into four. Roll out into a 2-3mm thick on a sheet of non-stick baking paper dusted with semolina. (i divide mine into 3 because i prefer a thicker crust. Roll out into a 5mm thick and place on a greased 7 inches flat baking trays) 
  • Top each pizza with some tomato slices, oregano, mozzarella and 'olives or basil leaves' (if you are using them)
  • Drizzle over some olive oil. (i did not use this)
  • Lift the baking paper and pizza onto the preheated trays. Bake each pizza for 15 minutes or until golden and crisp. Serve 4. (j send my ready assemble pizza into the oven without heating my flat trays and i bake it for 18 minutes)
**  If you love tomato and cheese you must try this. 
This is simply yet so delicious :D

    Ai yo... You are making me blush with all your flattering comments. I'm very happy to know you via blogging. My husband always laughed when he sees "knock knock" at my phone... LOL!

    I'm happy that you like this book. I'm a big fan of DH and always love everything she cooks and she is a super stylish cook :D

    I laughed reading about your son "pouring" the tomato ketchup... my son is the same. He is always crazy with his ketchup consumption... I have to limit his ketchup intake.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Get ready the filling and the wanton wrappers. This is the parade of my Shark's Fin dumpling ... lol Homemade parchment paper liner. Arrange them neatly into the bamboo steamer. HOT! HOT! Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy. Add in B, one egg at a time and blend well. 2)
