Sesame Roasted Chicken and Awards

My Shawn is a fussy eater. He only takes what he likes. I guess all kids are like that...> <  Shawn likes poultry, seafood and vegetables ( only potatoes, carrots, leek and celery).
When i was visiting a friend's blog, Shawn was beside me, he saw the Sesame Honey Chicken post that i was reading.
Shawn asked: ' Mummy, this look really yummy. Who cook this?
I said: 'Its mummy's friend auntie Jessie'
Shawn said: 'I like this. Can you cook this for me?'
I said: 'Yes, it lovely.. we will cook this'
This is a very delicious dish. i have cooked this dish the following day after seeing in Jessie's blog. I am cooking this again for our dinner last night!

可想而知,这烤鸡腿的魅力!!


It is actually quite simple to prepared. When you are having a busy day, why not marinated it overnight and the next day just roast it in the oven. I used 2 chicken maryland,  marinate them with worcestershire sauce, light soy sauce, honey, some water, some garlic and pepper. Simple right and it is really tasty.

做法很简单,只需把鸡腿掩料, 拌均掩30分钟或隔夜. 再送烤箱烤就搞定了.

Clean and dried the chicken with kitchen towel. Pricked the chicken with a skewer.


Pour all the marinade into a zip bag, add in pricked chicken maryland zipped up.

Start massage the chicken around and left it marinated for at least 30 minutes  or even better over night in the fridge.


After marinated arranged the vegetable at the bottom and chicken on top. Baked in a preheated oven at 190c for 35 minutes.

Honey Sesame Roasted Chicken
(Recipe Source: Jessie-Cooking Moments/ Min's Blog with Minor Adjustment)

Serves 2 adults and 3 kids  
Ingredients:
500g or 2 Chicken Maryland
2 tbsp Light Soy Sauce
2 tbsp Worcestershire Sauce
2 tbsp Honey
4 Cloves Garlic, crushed
2 tbsp Water
Pepper to taste
1 tsp White Sesame Seeds, toasted

Method:
1. Make a few cuts on the chicken maryland or prick the maryland with a skewer. Pour all the seasonings on the chicken & marinate for at least 30 minutes.
Note: I marinated the chicken maryland in a zip bag. 
2. Preheat oven to 190c and roast until the chicken are golden & cooked through.(I baked mine for 35 minutes)
3. Sprinkle with the toasted sesame seeds.

Tip from Jessie:
1. If you want to replace the worcestershire sauce with cooking wine, please reduce the honey by about 1/2tbsp.

2. During the cooking time, remove the baking pan, spoon the hot sizzling marinade & pour onto the chicken & vegetable.  Change the position of the chicken in order to get an even golden colour.

Optional Ingredients:
2 Medium Orange Sweet Potatoes, cut in cubes
2 Brown Onions, sliced
Olive Oil
Salt & Pepper to taste
Dried/Fresh Mixed Herbs

Method:
1. Place the sweet potatoes & brown onions onto the baking pan in a single layer.  Drizzle with oil & add salt & pepper to taste.  Add the mixed herbs. 
2. Place the chicken marylands on top of the vegetable & pour in the marinade. Cook in the 190C preheated oven until the chicken marylands are golden or cooked through.
(I did not add all of this optional ingredients. I only used 3 potatoes, peeled and wedge, 1 brown Onions sliced. Sprinkled with canola oil, pepper and salt and place at the bottom of a pyrex casserole dish and top with marinated chicken maryland)

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Get ready the filling and the wanton wrappers. This is the parade of my Shark's Fin dumpling ... lol Homemade parchment paper liner. Arrange them neatly into the bamboo steamer. HOT! HOT! Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
