CNY fondant cupcakes...新年小蛋糕




I saw this auspicious cupcakes just before Chinese New Year in Ann's blog. Then later I saw a whole Chinese New Year fondant cake in Sonia's blog. 

I like fondant very much. It gives the cake a very clean, neat and pretty look. Don't you feel the same way too? :p

Have some left over fondant after making a set of birthday cake for a friend's 80 years old father. It is a 8" sponge cake with non dairy whipped cream frosting and a 12 pieces of cupcakes with fondant decorations. I will share this soon.

Back to my Chinese New Year cupcakes. I make chocolate cupcakes this time. I love the aroma of this chocolate powder very much. I would like to thanks Crystal from 厨房找快乐 for sending this wonderful chocolate powder and some lovely gifts to me

This chocolate cupcakes are very nice to eat with a coffee or tea.
I love the blend of chocolate powder with the orange zest, it is so flavourful..:D

Chocolate cupcakes
recipe source:  i can't remember where i got this recipe but if you know please let me know

Ingredients:
125g butter.. soften (must be at room temperature)
125g golden castor sugar (i use 80g brown sugar)
110g self raising flour (sift together with cocoa powder)
2 1/2 tsp cocoa powder (i use chocolate powder)
2 eggs, lightly beaten (i use grade A)
1 tsp orange zest
50g chocolate chips (i omit this)

To do:
1) Preheat oven at 180c.
2) Cream butter and brown sugar till creamy and pale. Add in orange zest.
3) Add in egg, one at a time.
4) Turn mixer to low speed and dd in flour and chocolate powder and combine well.
5) Spoon into prepared paper cups about 70% full.
6) Bake in a preheated oven for 18-20 minutes.
7) Let the cupcakes cool before applying fondant.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Get ready the filling and the wanton wrappers. This is the parade of my Shark's Fin dumpling ... lol Homemade parchment paper liner. Arrange them neatly into the bamboo steamer. HOT! HOT! Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
