Kerabu Pelam ~ 芒果沙拉


Another exciting month of Malaysia Food Feast(MFF). After the previous Terengganu month have ended here comes the Kedah and Perlis month host by Wendy of Table for 2 or...more
I am like chasing after a  Korean/Japan drama episodes but this is MFF episodes. I am starting to appreciate more and more authentic Malaysian food from MFF. I am going to share a dish from Kedah. This is a dish i learn from Phong Hong Bakes, KERABU PELAM / MANGO KERABU
From what i understand kerabu means a mixture of ingredients (vegetables/ fruits/  rice/ meat etc) that mixed together with a dressing.

这次的主持人是Wendy. 我很喜欢这MFF, 我在MFF认识到很多很道地的马来西亚美食. 期待和追踪每个洲的到来, 我感觉我很像在追日/ 韩剧...哈哈
这次上的是在Phong Hong Bakes 家学来的吉打菜..芒果沙拉

是一道非常美味的开胃菜, 酸酸,带点甜,咸,辣和香, 口感脆和爽口...太棒了!!

I do agreed with Phong Hong adding the anchovy fillet really taste so awesome. I also like the plum sauce that she added it gives the tangy with a hint of sweetness in the kerabu.




Kerabu Pelam/Mango Kerabu

Ingredients:
Salad:
1 young mango, shredded
6 cherry tomato ~ (i used 1 medium tomato and cube it)
2 shallots, finely sliced
2 cili padi, finely sliced ~ (i used 1 normal chilly)
1 tablespooon dried prawns, soaked and drained

Dressing:

  • Juice from 2 limes (limau nipis)
  • 1 tablespoon fish sauce
  • 1 anchovy fillet cut into small piece (optional)
  • 1/2 tablespoon plum sauce
Garnish:
  • Crushed peanuts to garnish
To do:
  • Rinse and drain the saked prawns and fry until brown and crispy. set aside. (i rinse and drain the soaked dried prawns, added a few drops of oil and place in a mircowave oven proof bowl, cover with kitchen towel and mircowave on high for 1-2 minutes.)
  • In a bowl mix lime juice, fish sauce, anchovy fillet and plum sauce. Add a few slice of shallots to the dressing and set aside.
  • Place shredded mango, cube tomato, shallots, chilly and dried prawns in a mixing bowl.
  • Add dressing mix evenly.
  • Garnish with crushed peanuts and servre immediately.

    I think shredding using knife or peeler will produce drier mango shreds.

      Yes, i do thought of shredding using a knife or peeler the next time. Grating does put lot of pressure toward the poor mango and it becomes watery..:p

  17. Lena,yes the anchovy are so tasty. I have this anchovy on hand (given by a friend) so it so good I use it for my Kerabu:)

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Get ready the filling and the wanton wrappers. This is the parade of my Shark's Fin dumpling ... lol Homemade parchment paper liner. Arrange them neatly into the bamboo steamer. HOT! HOT! Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
