Happy Mid autumn Festival ...中秋节了~

Today is Mid autumn or moon cake festival  . I would like to take this opportunity to wish all my friends and everyone out there a warm 
Happy Mid Autumn Festival....^^
My boys is so busy getting ready their lanterns for this Mid Autumn Festival. They have a fews that uses little light bulbs which is given by friends two years back. I will let them play with it and kept it for the following years to come or until it can't be use. Hehe ..recycle the lanterns..save the environment and save money..lol
This year Sam have a special handmade lantern that he made in his Tadika.

我家的宝贝们很兴奋的把前两年朋友送的电子灯笼搬了出了.
老二呢..就在幼儿园带了自制的灯笼回来..

把蓝花浸泡在热水中让它散发它的颜色~

Thanks to Vicky (a friend from fb) and Yiisan (a dear kawan ) gave me some Blue pea flower. Vicky even gave me some pods with seeds..thanks so much Vicky. I use them to make my Crystal moon cake. I make into 2 types and I love the natural blue colour so so much.

Blue Pea Flower Crystal Mooncake(蓝花水晶月饼)
recipe source: mui mui

Ingredient for the fillings:
250ml full cream milk(i used nestle full cream milk)
200ml  water
50g castor sugar
1/4 tsp salt
2 1/2 tsp agar-agar powder(i used pearl mermaid brand)
3 pcs of pandan leaves, knotted


To do:
1) In a sauce pan, mix in sugar, salt, agar-agar powder. Stir to mix and add in pandan leaves and water. Cook over low heat and stir with a wire whisk.
2) Bring to a boiled.  (Once you see there is little little bubble rolling up at the side of the pan, then it is done. Do not let it go into a rolling boiled or the milk will have a layer of film)


( Pour out 150ml for making jelly yolks.** This is for  type 2 crystal mooncake.**)
3) Pour this mixture into  small cupcake molds @ 60ml each, ONLY WHEN YOUR JELLY YOLKS IS READY...then add in the ready jelly yolks into the centre of each cups. Let it set completely before proceeding to cook the skin of the jelly mooncakes.
4) When it is completely set, unmould it ..**AAA

Ingredients for yolks:
150ml agar-agar  mixture from filling**
60g of steamed mashed orange potatoes
1/8 tsp salt

To do:
1) Mixed both ingredients together while the agar-agar mixture is hot. If you can't mixed into a smooth mixture, just sift it through the sieve.
2) Pour into 3D round jelly mould to make jelly(agar-agar) egg yolk.
3) Set aside to let it set. When it is completely set unmould it and set aside in fridge.

~This picture is taken when i make the my plain jelly yolks and not this orange sweet potato jelly yolks which you can see the colour is slightly different ~

When these jelly yolks are set knock them out and put into the cups jelly. (Put the jelly yolk mould onto a 1/4 full tray of cold water to speed up the jelly yolks setting time.

Ingredients for the mooncake blue pea flower jelly skin (transparent part)
20 pcs of blue pea flower soaked in 250ml of hot water for 15-20minutes or longer to have deeper blue colour. Discard the flowers and use the 250ml blue colour water.
1 1/4  tsp agar-agar powder 
1/8 tsp salt
25g sugar
3 pcs of pandan leaves ~ knotted 

To do:
1) Add blue pea flower water, sugar, salt, agar-agar powder and pandan leaves into a sauce pan.
2) cook over low heat, stiring with a wire whisk. Bring to a boiled. Covered and set aside.

Ingredients for the mooncake blue pea flower jelly skin (milky part)
200ml water
200ml full cream milk
2 1/2 tsp agar-agar powder
1/4 tsp salt
55g sugar
3 pcs pandan leaves ~ knotted


To do:
1) In a sauce pan, mix in sugar, salt, agar-agar powder. Stir to mix and add in pandan leaves and water. Cook over low heat and stir with a wire whisk.
2) Bring to a boiled.  (Once you see there is little little bubble rolling up at the side of the pan, then it is done. Do not let it go into a rolling boiled or the milk will have a layer of film) Covered and set aside.


To assemble the type 2 blue pea flower jelly mooncakes:
1) Rinse mooncakes moulds with water and shake off excess water.
(this is for easy unmould when the jelly mooncakes are set)
2) Pour 3-4 tbsp of blue pea flower jelly mixture (transparent part) into the mooncakes jelly moulds. Allow to cool until almost set.
3) Pour 1/2 cm of jelly mixture (milk part) onto the first layer which is the blue pea flower transparent layer, slowly and carefully. Do not break the first layer while pouring in this second layer. Allow to cool until half set and add in the filling. (the jelly yolks that sets in  cups of filling..**AAA)
4) Pour the blue pea flower transparent mixture over and full up the whole mould. Allow to set completely in the fridge. This may take about 30 minutes. When it is firm to touch unmould it and serve it cold. Enjoy~
**if any of the mixture become half set or set while you are assembling the jelly mooncakes, just bring the mixture back to the stove and heat up on low heat it will goes back to liquid.

~Can make into different shapes and they look just as lovely..:p~


Making type 1 is quite simple, you just need:
2 parts of blue pea flower jelly mixture ~ Cooked mixture
1/2 parts of milk jelly mixture ~ Cooked mixture

1) Mixed them together, stir to combine. (you can get the pastel blue colour)
2) Pour 50ml into a mould cake jelly moulds. Allow to cool until almost half set.
3) Place in the prepare filling in the centre of the mould.
4) Top up with the mooncake jelly mixture and allow to set completely before chilling in the refridgerator. 
When it is completely set and chilled. Serve cool...Enjoy!

  3. Hi Mui Mui, happy mid-autumn festival to you & your family. I'm thinking whether is it becoz you have boys at home that's why you chose to make blue jelly mooncakes instead of other colours, hahaha!

      Actually it's my friends gave me some blue pea flower and I wanted to try out to see how blue it is. Ok ok , next time I will make a pink one for you low sugar and low fat..hehe

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
