Simple Chicken Pie ~ 超简单的鸡肉派

This is a simple and easy chicken pie and it is my boys favorite. It is simple all you have to do is make the pie crust, cook the filling and you are ready to make this chicken pie.
I use to make this pie whenever i have left over ABC soup (a simple and delicious soup of chicken, carrots, potatoes and onion) for my boys. I would keep the stock and use the chicken, carrots and potatoes to make this filling.





Simple chicken pie


Ingredients for the pie crust:
95g unsalted butter~cubed 
180g plain flour
1 tbsp corn flour
1 tbsp ice cold water or a bit more


Filling:
1 tbsp butter plus 1 tbsp olive oil
1 whole leg~precooked and diced
1 carrot~percooked and diced
2 potatoes~peel, precooked and diced
1 onion~diced
some black pepper
some salt to taste


white sauce:
30g butter
2 tbsp flour
150 ml milk


To do pie crust:

1) Put flour, corn flour into a bowl, add butter. Rub butter into the flour with your fingertips until fine and crumbly.

2) Lightly beat the yolk and mix in 1-2 tbsp of iced water.

3) Pour ice water into the crumbs. Use finger tip to mix the crumbs into a rough dough. Do not knead just mixed.


4) Wrap the dough with a cling foil and put in to chilled for 20 minutes.


To do for the white sauce:
1) Melt the butter in a thick bottom saucepan over low heat, then whisk in flour till combine.

2) Off the heat, pour in the milk a little at a time, whisking to a smooth paste as you go. When all the milk is incorporated, put back on the heat stir till it is a thick sauce. Do not stop stiring at any time. Pour the thick white sauce into a bowl and cover up with a clingfilm to stop a skin forming. Set a side to cool.

To do for the filling:
3) Melt a tablespoon of butter in saucepan or wok. Saute the diced onion, add in potatoes, carrots and diced chicken, stir to combined. Add in black pepper and salt to taste.

4) Dish out the filling let cool. When it is cooled mix all the filling into the thick white sauce.

5) Roll out the pastry into a 5mm thick sheet on a floured surface. Use a round cutter to the pastry to a big enough size and line into the bases you desired. As for me I uses a cupcake tray or pie cases. Leave a generous of pastry hanging over the edge for the pie cover to seal together later on.

6) Spoon the filling into the pastry lined cups. You can filled it up till full. Roll out another pastry sheet and cut out a round size to fit for the pie lid. Use a cookie cutter(shape that you desired) to cut the middle of the lid. This will let out the air and also as a decoration for the pie.

7) Dampen the side of the pastry with some water and lay the lid on and seal the side by pinching the lid to the side or use a fork to press to side of the pie so that they seal together.  Brush a little water on the back of the cut out cookie shape pie crust and paste back on side of the lid. Beat an egg for glazing, paint each pie with a pastry brush to glaze.

8) Perheated oven at 200C and bake for 25 minutes.


 ~I used mini muffin tray to make this chicken pies~

 ~the filling is creamy and a bit moist with the white sauce~

~the pie crust is crispy at the side ~

    Personally, I think brandy might be a bit strong in flavours and prefer not to use it as it might mask the vanilla flavours.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious.
