Free and Easy Bake Along #31 Whoopie Pies

I have never bake or taste a whoopie pie before. I do saw them in magazine but never thought they are Whoopie Pie because i always mistaken them as Macaroon. Only that Macaroon is wearing a skirt and Whoopie Pie is not. :D Now, then i realised those without a skirt are Whoopie pies.

其实,照版翻译Whoopie Pie是一种曲奇类吧! 吃起来口感像满福, 小杯蛋糕和曲奇之间. 我也是第一次做和吃.....好吃...
...是两片像大圆曲奇(饼..通常是巧克力味的, 也有其他口味的, 如南瓜, 柠檬等等)中间 夹着浓厚的奶油或其他的馅料...
...外皮的边带点脆, 里面松软带着香浓的馅料...好吃噢~~

Lemon Whoopie Pies
Recipe source: Joy the baker (the Bit Fat Cookie book)
makes 8 giant cookies
(i make smaller size which yield 12 small cookies)
Ingredients:
1 1/2 cups of all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
6 tablespoon (85g butter) unsalted butter, at room temperature
1 cup sugar (i use 2/3 cup only)
1 teaspoon finely grated lemon zest
1 large egg
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
1/2 cup buttermilk (i use 1 tablespoon of lemon juice mixed into 1/2 cup fresh milk)
 
To do:
1) Position a rack in the  middle of the oven. Preheat oven at 180C. Lined baking sheet on baking tray and buttered the sheets.
 
2) Sift together the flour, baking powder, baking soda, and salt into a medium bowl and set aside. In a large bowl, using an electric mixer on medium speed, beat the butter, sugar and lemon zest until smooth about 3 minutes.
 
3) Stop mixer to scrape the sides of the bowl as needed during the mixing. Add the eggs, lemon juice and vanilla, mixing until blended, about 1 minute. The batter may look curdled. On low speed, add half of the flour mixture, mixing just to incorporate it. Mix in buttermilk. Mix in the remaining flour mixture just until it is incorporated and batter looks smooth again.
 
 
4) Drop heaping tablespoons (about 3 level Tablespoons each for a giant cookie) of dough onto the prepared baking sheets, spacing them 3 inches apart. (I only use 1 heap tablespoon for each cookies) Bake the cookies one sheet at a time until toothpick inserted in the centre comes out clean and the tops feel firm, about 12 minutes. (i baked mine for 14 minutes maybe because of my oven is a smaller type) With the exception of a time line at the edges, the tops of the cookies should not brown. Cool the cookies on the baking sheets for 10 minutes, then use a wide metal spatula to transfer them to a wire rack to cool completely.

 
5) To assemble this whoopie pies.
Spoon or piped some vanilla custard cream onto the middle of one side of the whoopie pie and sandwich the othe half together.
 

 
 
Lemon Cream Cheese Filling(please refer to Joy the baker link on top)
I replace the lemon cream cheese filling with my left over vanilla custard cream from my Cafe Au Lait buns.

Vanilla custard cream (i only use half of this recipe)
Ingredients
A:
5 egg yolks
125g castor sugar
50g low protein flour (sifted)
(i felt my vanilla custard cream is a bit runny and i added 1 tsp of extra low protein flour for a thicker consistency..mine is half  of this recipe)
 
B:
625g fresh milk
 
C:
a good nob of butter ( i add 25g of butter...mine is half of this recipe)
 
To do:
1) Mix sugar and egg yolks together until combine. Add in flour and mixed well.
2) In a thick bottom saucepan boil the fresh milk until it is hot.( i added a vanilla pod for extra aroma)
3) Pour hot milk into (2) keep stir while pouring to prevent lumps. Stir until all are combined. If there is lumps, sift it.
4) Pour this mixture into a thick bottom saucepan and cook until it is thick.
5) Add butter and mixed well. Cover with a cling wrap and side aside for later use.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Get ready the filling and the wanton wrappers. This is the parade of my Shark's Fin dumpling ... lol Homemade parchment paper liner. Arrange them neatly into the bamboo steamer. HOT! HOT! Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
