Happy Valentine's Day....情人节快乐~




 Happy Belated Valentine's Day to all...hehe
I know there is  Happy Belated Birthday but don't know whether there is Belated Happy Valenitne's Day or not...:D


It happened that my hubby was sick on Valentine's Day.
Frankly, for me I always think if the couple is really care and love each other, everyday is a Valentine's Day. You can celebrate Valentine's Day anytime and not really have to be on a particular day.

Hehe anyway that is just my point of view...LOL


I baked these cuppies cake after Valentine's Day for my Valentines...
(My hubby and my three boys ...  to the ones I LOVE)




This cupcake recipe is from Nigella Lawson 'FEAST..Food that celebrates LIFE'
In her book she named these cupcakes 'Love Buns'. I love this recipe, it is simple and easy.
I may say it is a lazy way of making cupcakes...I mean for me...lol
WHY?? Do I said so...Because you do not need to use a mixer to beat the butter and sugar.



Follow me, you will see how?? I will share the recipe with a little adaption of mine..




LOve Buns
Ingredients:
For Buns
125g soft butter
125g castor sugar
2 eggs
125g plain flour, sieve in 1/2 tsp baking soda and 2 tsps baking powder
2 tsps vanilla essence
2-3 tbps milk


For The Topping
(I used non dairy whipping cream, some hearts shape coloured candies)


some cupcakes cases-I used the cardboard cupcake cases (my size is top diameter 4cm and bottom 5cm)


To do:
Take everything you need out of the fridge in time to bring to room temperature ~ this will make a huge difference to the lightness of the love buns later.
1) Preheated oven at 200c. (I used 195c for my oven)
2) Put all the ingredients into a food processor and blitz until smooth. Pulse while adding the milk down the funnel, to make a smooth dropping consistency.
3) Divide the mixture into all the cupcake cases, filling 2/3 up the cupcake cases. Bake in the oven for 15-20 minutes. They should have risen and be golden on top; you want a little peak if possible.
4) Let them cool a little, sit on the wire rack. 
5) Now for the topping, just whisked the non dairy whipping cream till it is stiff. (a peak form). No colour just plain white cream. Fill the whipped cream into a pipping bag fitted with a plain pipping tip. (I just want a simple decoration for my Love Buns).




~First pour the non dairy whipping cream into the mixture bowl..
Then whisk until it is stiff but not to stiff
~

6) This is how I do the frosting on the cupcakes. Start pipping from the middle of the cupcake, 1 drop, then go around pipping along the first drop, then you can see it is like a flower with 5 round drop of petals and keep going another around along the outer layer of the 5 drops. When you finish pipping, you can see there is 3 layers. Last but no least top the cupcake with a heart shape candy...ta..tat..tat..ta...is a Love Bun.

~ Have some extra. Keep them in a air tight container and keep in the fridge. It is a gift to a friend the next day~

    I use a brand called 'Right Flavors'.
    A 1 litre packed non dairy whipping cream.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious.
