Steam Ladybug cupcake

When I first saw this cupcake was in Kak MaDiHae's blog. I was so impress by the cute little Ladybug steam cupcake. I tell myself I must try to do this one day...hehe don't know when yet.
Until I get to Kate from Sally's blog, I saw she join the Aspiring Bakers #13 with her 西施蛋糕. I too, want to join and I think I must try this Ladybug steam cupcake. I want to join Aspiring Baker #13 with this cupcake.
This is a soft and spongy cupcake. Nice and cute some more....^^


Ladybug Steam cupcake
Ingredients:
3 cold eggs
275g plain flour
3 tsp baking powder
150ml fresh milk
1 tsp ovalette
220g castor sugar ( I used 150g only)
1 tsp vanilla essence

To do:
1) Put all the ingredients ina mixing bowl and beat with medium high speed for 6 minutes.
2) Take 1 tbsp plain mixture and put into a piping bag. 
3) Take 3 tbsp plain mixture, mix with brown colouring and put into piping bag.
4) Colour the rest of the mixing with bright red and filled into a piping bag.
5) Pump the red into a paper cup about 8% full. Draw a cross with the brown mixture and do dots on both sides.Colour the upper half of the cross brown and make 2 plain dots for the eye and fill the inside with the plain mixture.
6) Steam with meduim high heat for 12 minutes.

  10. Hi Emily, this recipe yield about 18-20 small cups...
    Ovalette is a kind od emulsifier and stabilizer.
    It is golden in colour and it's sticky like cream Are you in Facebook? If yes I have pictures of ovalette there. I can tag you to show you.

      Ovalette is a type emulsifier for making cakes.
      You can buy them in shop that sell baking ingredients.

    wonderful ladybug steam cakes!
    i thought of making them tomorrow. i noticed that there isn't any fat content in the recipe such as margerine / oil / butter. is it fine just to leave it out? i thought of also leaving out ovallete. plks advise. thanks mui mui.

    Yes, this steamed cake has no oil nor butter/margarine.
    It's the ovallete that make the cake moist and soft.
    Please don't leave out the ovallete.

      Thanks for compliment : )

      This cupcakes will be denser the next day.
      This cupcake is not the soft and fluffy type. It is more to moist, dense and tender type.

      I normally will let it cool on wire layer then keep it in a air tight container. It last for 2 days.

    Sorry for the late reply.
    I guess you could but you have to reduce the amount to 1 1/2 tsp. The taste will be not so nice I guess but if you can get baking powder it is much more better. The taste is nicer.

  25. Smitten by the cute pic of your ladybug cupcakes, I made the cupcakes today following your recipe. Sadly to say, the result was not very nice. All my cupcakes 'blossomed'..broken into 2-3 parts on top, they looked more like 'hua gao'.. For the 2nd batch, I lowered the fire, but still failed to get unbroken cupcakes. Any advice? Should I reduced the baking powder?

      Sorry to hear that your cupcake didn't turn out well but at least it's a edible 'hua gao' .. LoL

      A little tips here, try not to over beat the cupcake batter. It's a light medium thick ribbon like flow batter. Use medium lower heat to steam.

    I tried baking these cupcake. It's very easy!
    It taste yummy when it's serve hot..but My cupcakes turn hard when it's cold.
    Does it happen to yours ?

  27. Hi mui mui, just made these cuties today. Turned out well from outlook point of view but texture was quite dense and kinda hard. Should I re-steam it the next day or I need to watch out for in my method for future reference?

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
