Look forward for Apple Pie..~ 想吃苹果派...^^

Apple a day Keep the doctor away...haha this is the saying...but  it really works.
 There is a few granny smith apple laying in the fridge fruits and vegetables compartment for a few days need to get rid of them. I guess making Apple Pie is the best way....^^


~ Apple Pie..I love it ~



~ I make 2 of this Apple Pie with this recipe ~

Ingredients for Apple filling:
3 granny smith apples ~peeled and diced 
1 tbsp butter
2 tbsp sugar
2 1/2 tbsp brown sugar
2 tbsp lemon juice
1 tsp lemon zest
1 1/2 tbsp plain flour

To Do:
1) Mix cubed apple, sugar, brown sugar, lemon juice, lemon zest together.
~This it the cored and diced apples~


 ~All the ingredients are added to the apple~

2) In a sauce pan add in butter and saute the mixed apple until it is soften.
3) Add in flour and stir to combine, dish up and let it cool.


~Apple filling is ready~


Ingredient for pastry crust:
60g butter
120g plain flour ~ sieve
55g icing sugar ~ sieve
1 yolk
1-2 tbsp ice cold water

To do:
1) Rub butter into the flour and icing sugar with your finger tips till bread crumbs assemble. Mix in yolk and cold water mix into a dough.
2) Wrap the dough with a piece of cling foil and put into fridge for 20-30 minutes.
3) Roll the pastry flat about 5mm thick and cut out a round piece to put into the pie pan and tuck in neatly.
4) Fill in the apple filling into the pie case. Again, roll out a piece of pastry into  5mm thick and cut into 1cm width strips for the pie cover.
5) Bake in a preheated oven at 200c for 20 minutes


Below is the method of pleating the pie cover..

~Rolled the pastry into retangle and cut into long strips~

~~Lay two strips on a piece of plastic sheet, like a cross~

~Lay another two, one on top of the horizontal piece and one under the horizontal piece but lay in vertical line~

 ~Repeating the steps again with another two pieces~

 ~If you find that the pieces is blocking in the process, you can just simply fold up that piece~


 ~When it is finish pleated, just cut out a round shape with the pie tray and cover on top of the filled with apple filling pie case...brush the side of the pie case before putting on the cover~

~This is the look of my loose bottom pie tray.

 ~Thid is the end result of the pie case~

~Brush with egg mixture to give the shinning and even browning look when it is bake~

~Yummy ~~ its done~

    My tart mould is 11cm in diameter and 2cm in height.
    Yes , you may make it in egg tart moulds, only it may be a bit tedious to do into small mould as egg tart moulds.
    Anyway, no harm trying of course.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious.
