A special Birthday cake for the Special One....^^

                                       ~A piece of yAm Cheesecake~

This year I wanted to make a very special cake for my hubby's birthday. When I ask him "what cake would you like to have for your birthday?" He answer "you choose for me."
I choose a Yam Cheesecake...^^

                                                   ~Hubby's Yam Cheesecake~

Ingredients for base:
100g butter diced
170g digestive biscuits, finely crushed
2 tbsp firmly packed brown sugar
50g almond flakes, toasted

To do:
1) Melted butter in pan over low heat. Add in combined biscuits, sugar and almond flakes. Press into a greased 23cm spring form tray. Cover and put into refrigerate while preparing the filling.
**Use only pure butte or unsalted butter. Because butter will affects the taste of the biscuits base, avoid using margarine or butter substitutes.   

Filling:
500g cream cheese
30g butter
160g castor sugar
700g yam, cooked and diced
2 tbsp + 2 tsp corn flour, sifted
400ml whipping cream
4 eggs lightly beaten

To do:
1) Beat cream cheese and butter until smooth. Add castor sugar, three quarters of the yam and cornflour and beat well. Add cream and blend until mixture thickens. Slowly pour in eggs and mix until just combined. Stir in remaining yam. Pour filling on biscuits base.
2) Place cake pan in water bath. Bake for 1 hour 10 minutes or until filling is set and browned. Turn oven off. Leave cake in oven for 30 minutes with door closed. Remove water bath from oven. Leave cake cool with door ajar.
3) Cover cake pan. Refrigerate for at least 6 hours before removing cake from pan.

  2. The top is the browning colour after baking. The cream cheese is mixed in the cake.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious.
