Grandma's birthday cake..^^ 外婆的生日蛋糕

Every year when it comes to my dear grandma's birthday, all of us her grandchildren will have to prepare a dish to bring over for dinner. It is just like having potluck gathering for our family. Everyone of us enjoy it this way for years.

This year it is special for me, because I am preparing a birthday cake for my dear 外婆..^^
I make a simple cake but with all my heart...:p It is a Sponge cake with kiwi filling, sandwich in between.

Sponge cake:
4 grade 'A' eggs
65gms castor sugar
15gms ovalette
25ml milk
90gms plain flour ~ sieved
55ml melted butter

To do:
1) Lined greaseproof paper on a 23cm x 27cm swiss roll baking tray.
2) Beat eggs, sugar, milk and ovalette until foamy and thick. (Take about 5-8 minutes to beat) Turn mixture to low and blend in the flour just to combine.
3) With low speed slow pour in the melted butter while beating. Do not over beat the mixture.
4) Pour the mixture into the prepared baking tray and baking at 180c for 20 minutes.

Icing of the cake:
300ml Non dairy whipping cream
2-3 tbsp Bakels kiwi filling

To do:
1) Whisk the non dairy whipping cream in medium speed until it is double the volume but do not over beat it. ( If over beat it will turn to watery and will not hold its shape)
2) Take out half of the beaten cream and mix with the kiwi filling and spread on one of the sponge cake. Lay the other sponge cake on top.
3) Use the left over cream to spread on the whole cake and add on the decorations.

Decorations of the cake:
some cooking chocolate
some royal icing flowers
2 sugar gumpaste ladybugs
some kiwi fillings

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious.
