My mum's Mother's Day cake ;D

This year my mum is in Taiwan on Mother's Day so we celebrate a belated Mother's Day...^^ when she is back.

My mum make a special request from me. She requested a Fruits Cake for her Mother's Day cake. This is the cake I made for my mum.



Instead of hazel nuts I add in almonds. I love the smell of almonds when you bake it. Hmmm.... its so so... awesome.

This is a more simple version Fruits Cake. If you love Fruits Cake you must try this.

Ingredients:
120g raisins
60g dried black currants
60g dried apricots
60g dried pineapple
40g dried green grapes
40g dried plums
80g hazelnuts and mixed peel
30g glace cherries
60ml rum
120g butter
120g soft brown sugar
2 eggs
120g plain flour
1/4 tsp baking powder
1/4 tsp cinnamon powder
1/4 tsp ground nutmeg
30ml rum
**I use brandy instead of rum in my Fruits Cake.
**you can use any combination of fruits as long as it is 500g, eg I am using packed mixed fruits.
To do:
1) Preheat oven to 170c.
2) Prepare a 19cm round baking tin and line the base and side with 2 layers of parchment paper.
3) Soaked dried fruits and nuts with 60ml of rum for 1 night or 1 week.
4) Sift flour, baking powder, cinnamon and nutmeg.
5) Beat butter and sugar until creamy. Add eggs one at a time beat until combined.
6) Fold in half of the fruits and nuts, stir to combined then fold in half of the flour mixe well. Alternate between half of fruits and flour then mixed into a smooth mixture.
7) Pour mixture into prepared baking tin.
8) Bake at 170c for 20 minutes. Then reduce to 150c and bake for 1 hour and 10 minutes.
9) Remove from oven. Brush rum over the surface of the cake. Cover with aluminum foil. Cool on wire rack.
**This cake can keep up to 2 to 3 months in air tight container.

They all looked so delicious especially the Chicken Steam Bao, Durian Buns and those flat pastry with sausages on it, how did you do it. Would love to hear from you very soon.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious.
