I guess everyone had a old time favourite. Especially when you think of your younger days. Those happy days when you were in school, having your favourite food or snack (in the canteen) like curry puff, banana fitters, nasi lemak or any type of kueh-muih... Or even your the van penjaja who use to come around your house area in the afternoon to sell cakes and buns for afternoon tea.
This is what happened, my hubby's old time favourite is this coconut buns which is use to sell by a scooter penjaja who is a Indian man. He loves the coconut filling that is mixed with gula melaka, that gives a very aromatic smell and taste.

Ingredients for basic dough:
- 250ml water
- 1 egg
- 7 tbsps castor sugar
- 1 tsp salt
- 500g bread flour
- 50g butter
- 2 tbsps milk powder
- 2 tsp instant yeast
- Pour every ingredients into the Noxxa breadmaker bread pan. Slide the bread pan into the breadmaker and press mode 10.
- When the cycle is finish, take out the dough and divide the into small dough. Each small dough is about 40g. Makes about 24 small doughs.
- Cover the doughs and let it sit for 10 minutes.
- Flatten a small dough by using a rolling pin so that the air bubbles in the dough can be release. Put a spoon full of the coconut filling on the flatten dough and wrap up and sealed neatly.
- When all the small doughs are filled up cover it with a cloth and let in rise for 40 minutes or double it size. Brush the buns with small egg and milk mixture before baking.
- Perheated the bread oven at 180℃, put the oven rack on low level and bake the buns for 15 minutes.
Coconut filling:
- 200g freshly grated coconut (you can buy this fresh grated coconut in supermarket or wet market and 200g is about Rm1.00
- 35g castor sugar
- 1/2tsp salt
- 70g gula melaka
- Plain fried the coconut in a sauce pan until it is slightly dried. Add in castor sugar and continue fried until sugar is melted.
- Add in salt, stir well and lastly add in gula melaka. Stir fried until it is all combine. Set aside and let it cool.
